In a moment of weakness, I've committed to a turntable update. As the new table
doesn't come with a cartridge, I will need to purchase one.

That it struck me that picking a cartridge might be a pretty tricky task. Not only
does it need to match the arm, but unless your dealer happen to have a sample mounted,
it's unlikely you can hear a cartridge before you purchase one.

Beyond trusting the dealer's suggestions and reading up various reviews, is there
anything that can be done?

You could start by posting the type of table and tonearm that you have purchased and ask for some first hand feedback from users with the same table/arm. Also, it would help is you could state a budget.

Also some sonic preferences would be helpful - level of warmth, tone, speed, detail, type of music etc.

Yes there is something you can do, obviously. Research, ask questions and if necessary try to find the product you are interested in buying set up to hear.
Rinse, repeat until satisfied.
Strange though, you could have dove in with info but made a little initial poke instead.
